Recipe Exchange: Heart Healthy Baked Salmon

After all the indulgences of the Super Bowl, it's nice that Heart Month reminds us to get back on track with healthy eating. The American heart Association and Go Red For Women have a fabulous recipe collection - everything from appetizers to desserts, all made heart healthy. Equally important, they're delicious, too. If you thought you have to give up good taste to eat right, let these recipes change your mind. This is the one I'm trying this weekend.



Spinach-Stuffed Baked Salmon


What You'll Need:


1 teaaspoon olive oil

2 ounces spinach

1 teaspoon grated lemon zest

1/4 cup chopped roasted red bell peppers, rinsed and drained if bottled

1/4 cup fresh basil, coarsely chopped

2 tablespoons chopped walnuts Cooking spray

4 salmon fillets (about 4 ounces each), rinsed and patted dry

2 tablespoons Dijon mustard (lowest sodium available)

2 tablespoons plain dry bread crumbs (lowest sodium available)
