Recipe Exchange: Quick Chicken Pot Pie

All this dreary weather & images of frozen cities everywhere else in the country are making we want comfort food. Warm, creamy comfort food. Made quickly, without a lot of preparation.

Happily I found this great recipe from Campbell's Kitchen online, with ingredients that you might already have at home - and if not, even your husband ought to be able to grab these few items correctly at the grocery store (seriously, no offense to men, but my Dad could never quite get the shopping right! :) )

What You'll Need:

1 10 3/4 oz. can Condensed Cream of Chicken Soup

1 cup milk

1 12 oz. package of frozen mixed vegetables (thawed)

1 cup cubed or shredded cooked chicken (save even more time - use the meat from a rotisserie chicken!)

1 egg

1 cup biscuit baking mix


What You'll Do:

1. Heat the oven to 400. Stir the soup, 1/2 cup milk, vegetables and chicken in a 9-inch pie-plate or casserole dish.

2. Stir the other 1/2 cup milk, egg adn baking mix in a small bowl. Spread the batter over the chicken mixture.

3. Bake for 30 minutes, or until the topping is golden brown.


For a casual, cozy mood:

Serve in a giant mug & enjoy while snuggled in a blanket on the couch.
