Thursday Recipe Exchange: Mom's Day Breakfast in Bed

Breakfast in Bed is one of the most-cherished Mother's Day traditions for kids to show mom they love her. Of course, since kids are not likely to be experienced chefs, I thought keeping it simple would be ideal. Here's one kid-friendly breakfast-in-bed menu from Cooking With Kids.

The other suggestion for breakfast-in-bed is to tailor-make scrambled eggs with Mom's favorite extras. Some typical additions to scrambled eggs: bacon bits, olives, mushrooms, tomatoes, onions, cheese (mom's favorite kind), ham, sausage and salami. You can also personalize the eggs with spices that reflect mom's preferences, whether she likes her eggs spicy, garlicky, or with salsa. Here are some variations, along with instructions. You'll also want to check with mom on whether she prefers her eggs extra flully, lightly cooked, or well done!

My favorite basic scrambled egg recipe:


What You'll Need:

2 eggs

a drop of milk

salt, pepper & paprika

Olive oil spray

What You'll Do:

Crack eggs into a bowl, add milk, stir.

Add spices, stir.

Pour mixture into pre-heated (on high), sprayed pan. When mixture starts to bubble & turn solid, turn heat down to medium & start scrambling. Continue scrambling until eggs are solid. Allow to cook until the texture is how you prefer - hard, soft, burnt!


Serve with toast, fruit, juice & coffee. Be sure to include a card!
