Recipe Exchange: Lime, Shrimp & Avocado Salad

It's true, Florida is known for turning out some very bizarre news stories (as you may have seen on The Late Show with Seth Meyers
). But we're also known for producing great fish, citrus, fruit & vegetables. This recipe has a distinctly Florida flair - and in keeping with our focus on health during Women's Heart Health Month, it's a perfect combination of lean protein, vegetables and healthy fat (the avocado). Enjoy!
Lime, Shrimp and Avocado Salad
What You'll Need:
1 lb jumbo cooked shrimp, peeled and deveined, chopped
1 medium tomato, diced
1 avocado, diced
1 jalapeno, seeds removed, diced fine
1/4 cup chopped red onion
2 limes, juice of
1 tsp olive oil
1 tbsp chopped cilantro
salt and fresh pepper to taste

In honor of the South Beach Wine & Food Festival this weekend, I decided to share a recipe from one of the many celeb chefs in town. And since it's still Heart Month, and maintaining a healthy weight is one of the key factors in preventing heart disease, I chose Rocco DiSpirito as the featured chef. He, himself, lost 30 pounds by changing the way he eats (see the picture); and has written a series of cook books with healthy recipes.

After all the indulgences of the Super Bowl, it's nice that Heart Month reminds us to get back on track with healthy eating. The American heart Association and Go Red For Women have a fabulous recipe collection - everything from appetizers to desserts, all made heart healthy. Equally important, they're delicious, too. Spinach-Stuffed Baked Salmon
What You'll Need:
1 teaaspoon olive oil
2 ounces spinach
1 teaspoon grated lemon zest
1/4 cup chopped roasted red bell peppers, rinsed and drained if bottled
1/4 cup fresh basil, coarsely chopped
2 tablespoons chopped walnuts Cooking spray
4 salmon fillets (about 4 ounces each), rinsed and patted dry
2 tablespoons Dijon mustard (lowest sodium available)
2 tablespoons plain dry bread crumbs (lowest sodium available)

Recipe Exchange: Bahamian Conch Fritters

I love winter in South Florida. When we have a cool front, the sky is perfectly blue, the air is refreshing, and it feels like paradise.
Winter everywhere else? Just looking at the pictures of the snow in the rest of the country sends my brain immediately into "Go to an island' mode!

Lyrical Inspiration - 'Forever Young'

Did you know that Bob Dylan shares writing credits on this song?
Rod actually co-wrote the song with a couple of bandmembers, and when they realized the similarity to an early Dylan song, also titled 'Forever Young', they sent it to him for approval. Dylan, cool as ever, had no problem with it, and agreed to the writing credit. Here's the whole story.
